DANDELION LEAF

Taraxacum Officinale 

Though the root is the primary medicinal component, the leaves are most often tossed into salads or picked straight from the plant and eaten.  The leaves contain 7000 units of vitamin A per ounce and are also an excellent source of vitamins B, C, & G.

The entire plant is bitter and the leaves are often blanched or cooked like spinach before eating.
